I've actually had something like this a few years ago. Tastes really, really gag awful... and leaves scales in your mouth.

 

 

From what I've read, there's two different ways to prepare it.

1. Drown the snake in the sake, which can make it smell/taste awful.

2. Disembowel the snake before putting it in the sake, which makes it not smell/taste as bad.

 

The habushu I had didn't taste so bad.
