for me it's probably Agouti which is a big rodent... I cooked it in a traditional West Indian styled curry... was pretty good but not as amazing as some people make it out to be.. not something I would rush to buy or cook again

It kind of resembles a small eared rabbit. Did it taste like rabbit?

I've tried ostrich, bison, and sheep brains. All great.

 

Ostrich is very much like beef, and so is bison, but both are significantly leaner. Brains are certainly an acquired taste... I had it in a curry, so the inherent flavour of the brains was masked by spices. Has a kinda slimy texture though. I've also had battered/fried brains, and that's great for the textural contrast between the crunchy outside/softer inside. Cooked like that, it's not slimy, but it is soft and fluffy almost.

 

I've also had trotters which are pig knuckles/feet. It's slimy, sticky, gelatinous and friggin delicious lol
