Ostrich is very much like beef, and so is bison, but both are significantly leaner. Brains are certainly an acquired taste... I had it in a curry, so the inherent flavour of the brains was masked by spices. Has a kinda slimy texture though. I've also had battered/fried brains, and that's great for the textural contrast between the crunchy outside/softer inside. Cooked like that, it's not slimy, but it is soft and fluffy almost. I've also had trotters which are pig knuckles/feet. It's slimy, sticky, gelatinous and friggin delicious lol Link to comment Share on other sites More sharing options...
