Oh.



I'm going to eat lunch. Made some rye bread with the bread machine yesterday. thumb.gif



Now, I know rye doesn't produce glutinous structure you expect from other flours, which is why it's often mixed with something else, but what I don't get is why the bread machine manual recipe says to use 3 cups of bread flour and 1/8 of a cup of rye flour.


I altered that anyway, so I had about 1/4 c. or maybe slightly more of rye flour out of the same total volume, in addition to putting in anise seeds on top of the caraway, as per my late grandma's recipe for Swedish rye.


But I'm wondering if it's a bread machine thing. Because my grandmother's recipe had a hell of a lot more rye flour by proportion. confused.gif


Anyway, I love warm, fresh bread with butter. Mmm.
