lots of great recordings mentioned here. but for me, the live record that inspired me to want to play guitar (and even though my taste in music has broadened considerably since, still continues to inspire me to this day) would be...

UFO - Strangers In The Night

i wore out two vinyl copies of it as a kid. and even though i never tired of it, only recently did i 'rediscover' it on cd. it captured the band at their peak, and is flawless from beginning to end.

not only is Michael Schenker's guitar playing incredible, with several amazing solos that build upon and complement the songs perfectly (rather than simply gratuitous display of virtuosity) ... the songs themselves are great examples of melodic hard rock at it's finest, and the live versions are all better than the already excellent studio originals.

Jeff Beck: Live At BB King's (ltd edition; internet only, WTF)

... and +1 on Dylan 66 and The Allman Bros Fillmore album, though jeez, some of those solos don't

Jackson Browne - Running On Empty
While it isn't exactly a "live" album, it was recorded in various places other than a studio. Considering the technology back then and that at times a card board box was used as a kick drum when recording on the tour bus, it sounds great.

Thin Lizzy - Live and Dangerous

Rory Gallagher - Irish Tour

Yes, I'm aware some of those were pretty heavily doctored.

Although not a 'live' album in the sense of being a concert Jimi Hendrix's Radio One recorded in a BBC studio strikes me as one of the best, most honest live performances by a band, ever.
