As the slope gets steeper (larger number), you may hear more problems at the frequency cutoff point - the knee. These problems can include distortion and phase problems, as certain sounds are reinforced or cancelled around this cutoff frequency. This can be compounded if the EQ is being applied to a complex signal (an entire mix, for example) as opposed to a simple signal (lead guitar solo). It's often a good idea to keep that point well away from useable frequencies as you choose steeper slopes, unless you are looking for a specific effect. I normally will start with a 12 dB / octave slope, but might switch to 6 dB / Oct. if that seems too steep and is killing too much, or maybe 18 dB / oct. if I need a steeper slope.
