Video Camera for Light Show Capture

Most video cameras really suck in low light. You will definitely need a 3 chip camera. Preferably a prosumer 3 chip camera. Something like a Sony PD170 is a good Standard Definition Camera that most rental houses carry for a reasonable price. Sony's low light performance is pretty much the best on the market, however there are many manufactures that are pretty close.

Being able to manually select the exposure would also be good provided you have a knowledgeable camera operator.

The JLB / Gilmour's Breakfast videos were done using a Panasonic PV-GS320 3 CCD DV camera. Not sure if these are still in production or not... It belongs to one of the guitarists.
