Much impression and kind of influence to me had the "San Lorenzo" piano-solo done by lyle mays on the Album "Travels" live from the Pat Metheny Group. Early Eighties and of course a bit "jazzy", but great.

I happened to convince many friends to jazz just from hearing these album.

All of the ones I thought of were taken (e.g., Take a Pebble, The Way it Is) so here's one not on the list....How about Layla by Derek & The Dominos? Not especially demanding from a technical standpoint, and perhaps not technically a piano "solo" since the guitar doubles much of the main figure. But the piano is instantly recognizable, and oh how sweet!

 

And an eleventh hour contribute I just thought of while typing this....."Linus & Lucy." Well, perhaps it is more of a song than a solo.............
