I wouldn't think the chords would change too much. From what I've heard there are a good bit of 7ths. There are feels, and as Rhino says, instrumentation, and of course subject matter, but other than that stuff, you're really talking very trad folk harmony here. I gotta say though, you never really appreciate that music enough till you hear it in its element. Sipping a beer in small town Hilo on the big island and hearing the locals sing and play... great.
