What is a "hotter" output?

Technically - it only affects the volume.

 

However if whatever amplication your using has trouble dealing with the "hotter" signal - you may find that it clips the input channel which will affect the quality of your sound. Two of my keyboards have both 1/4" TRS (balanced) outputs AND balanced XLR outputs. Unfortunately, the balanced XLR outputs are so hot that even with the input gain on the channel strip of my mixer (Yamaha MG12/4FX) - it still overdrives the channel strip. I ended up going back to using the 1/4" TRS outputs and no longer have that issue.
