Is the above correct for parallel wiring? I just got one of those old Fender oversized 2x12 cabs. Can I go from the jack to the terminals on the first speaker (+ & - respectively) and use a jumper over to the second speaker from the first?

Yes, as long as you connect + to + and - to - it doesn't matter if you do it at the jack or on the "first" speaker.

Check twice, solder once. In a 2x12" cab, the speakers will usually sit with the terminals facing each other, towards the middle of the cab. That means the jumper wires will have to cross (since the + terminal is on top on one of the speakers, but on the bottom on the other). And yes, I've done the rookie mistake of just hooking it up without looking... :D
