I was listening to Late Registration and his mixes are really good. They sound good even on the worst sound system/stereos. (I meant to ask this question a long time ago). Err.. No. West did all his own beats before he scored. He certainly knows his way around an MPC. I think the rest's session musicians. Alot of the analog synth parts where played by Kanye and Jon Brion who co-produced the album. Eric Gorfain did most of the string Orchestration. West produced hit singles for major hip-hop/R&B artists, including Alicia Keys, Jay-Z, Janet Jackson, Brandy, Talib Kweli, Dilated Peoples, Ludacris and John Legend. so i think he might have "any idea what was used" http://www.futureproducers.com/forums/this forum is more hiphop oriented, so you might try there too...
