Any sonic differences between them would probably be swamped out by other "live show" factors. The 58 is well armored and generally the best choice for the worst of battle conditions but if you remove the wind screen it is more fragile than the 57. You can get the actual Shure A2WS wind screen for the 57 or many standard foam pop filters or in the studio you could use a hoop style pop filter. Choose your weapon... I learned to use them quite well for vocals cause it was one of the first I ever owned, I use a Beta 58 now which is a very good mike for live vocals, but theyre not cheap. Wouldn't something with a tighter pattern (more directional) have greater proximity effect? That's certainly the case with all my mics. I don't own a 58, by the way. The 57 and 58 are cardioid mics, directional but certainly not what I would call "extremely directional" mics at all. They both exhibit what I would consider a pretty large proximity effect. I would say you have it backwards there, the 57 has a bit more proximity effect because you can get closer to the capsule than with the 58 which makes you stay a bit further away because of it's ball end pop filter. I deffinatly would use a 58 for vocals over a 57, if for no other reason than the 58 sounds better to ME when I'm singing. I seem to struggle with a 57. Both the 57 and 58 have the same pattern, as has been mentioned here a number of times they are essentially the same mic except for the wind screen which does affect the tone a bit but the pattern of both mics is cardioid. This just shouldn't be this difficult. Say it with me now "the SM57 and SM58 are very similar mics that use the same dynamic element."
