Can't really argue with the Les Paul, but of the more recent signature models, I really dig the Albert Lee ones. They come with a few different pickup combos, but the P90 version is high on my GAS list:

I'm gonna go with Rick Nielson. The guitars that Hamer has built for him are amazing. I believe he has a signature Taylor guitar as well.
