So when you hit the drum, the crystal is compressed, and it tells a drum "brain" that you've hit the drum and to emit a sound through the amp. They come in a variety of brands and designs, some are more durable and sensitive than others. Triggers are most often used on bass drums for guys who want more articulation in their double bass drum sound.
