If i pick, i keep my hand anchored on one of my pickups.

And this for all the strings. Now, i've seen that many players only anchor on the pickup when playing the E string, and anchor on the strings themselves if they need to pick lower strings.

 

Is there a disadvantage of keeping my hand anchored all the time on the pickup?

Not at all. In fact, it's more consistent if you keep your hand in the same place. I suspect that the players you've seen who "anchor on the strings themselves" are really using the palm of their picking hand to mute the open strings.
