Basically, you have to know what you're looking at. Know the item's value, know what to check for structural weaknesses, finish problems, functionality, abnormal wear. It comes down to looking at a lot of "instruments" and knowing what's good and what's not.

 

Check for cracks, neck straightness and check if it's warped, functionality of electronics, how do the tuners feel, is there any weird wear that isn't normal?

 

Make sure you can plug in, check for sound (obviously), make sure all the pots do what they're supposed to and don't crackle. If you can, check for rips or tears, check jacks and cords.

 

But really - know the value. There used to be much better deals in pawn shops years ago. Now thanks to the Internet, and particularly eBay, it's easy for a shop manager to check the value of an item, even if he or she has no expertise in the area.

 

Again, know the value and know what to look for.

 

(I am amazed at how little this response had to be adapted from IWLP's in the original post, apparently some things just go hand in hand like that)
