To over-generalize,the Fender single-coil sound was a staple of 70s rock and country,while the Gibson humbucker sound has traditionally been associated with rock and blues. There's also the question of looks. For example Kramer and Ibanez tend to have more "metal"-looking models and they use humbuckers.
