Right now when I play it I just play 7th chords, except for the V, where I usually play it as a 9th chord, or a b9th chord if it's altered. I'm curious as to what extensions sound good with that ii-V-I progression, as a series of chords I mean, where each note in the chord moves to the next in a pleasing (or interesting) manner. Is the choice of extensions based on how it will lead into the next chord? Or is it more about adding cool color tones to each chord in isolation without thinking about the progression, but perhaps to add an interesting harmony color to the melody? What are some interesting extensions that work well in a ii-V-I, one leading into the other?

It's a little bit of both, but following voice leading will always yeild good results. Here are a few (extensions in top voice unless otherwise noted): Dm9 - G13 - Cmaj7 (third in top) Dm9 - G7(b13) - Cmaj7(third in top) Dm7 (root in top) - G7(b5) - Cmaj7 (root in top) Dm7 (root in top) - G7(b5) - Cmaj9 Dm7 (root in top) - G7#5 - Cmaj7 (third in top) Dm7 (fifth in top) - G7#9 - Cmaj7 (7th in top) Dm11 - Db7(#11) - Cmaj7 (fifth in top) Dm11 - G7(b9) - Cmaj13 Just try to create some melodies with the top voice.
