An E7 would be E,G#,B, and D. I know the second one is a distance of a minor 7th but how would it be notated? What would the third be called? Thanks.

Not sure what you want to know, these are the chords that are implied by your two notes. Ex 1 - E-B = E5 - Interval is a Perfect 5th Ex 2 - E-D = E7 - Interval is a minor 7th Ex 3 - E D# = Emaj7 - Not sure if you call the interval a 7th or a minor second.
