They have people much smarter than us working on the margins of error and accounting for people not filling the census out and not filling it out honestly/correctly. Even if you believe I live in la la land the census is still the best representation we have of this information. If you have issues with its reliability and methodology that's fine, I'm sure there are articles out there explaining it. I'm simply posting what I've learned in my studies.
