Members eflatminor
How about The Allman Brother's 'Little Martha'? That's a nice instrumental in open E. It's often played as a duet but it can be done solo.

Members JonR
For simple instrumentals, check out late 50s/early 60s stuff by the Shadows, Ventures, Duane Eddy, and various surf tunes. Lots of fun...

Lots of fun... Yes, try "Walk, Don't Run" by the Ventures...Simple but memorable single-note melody in A minor (same notes as C major scale), and a fairly simple chord progression. (Caution - this song may make you want a guitar with a vibrato bar)

Members Reverend Mark
Work up some Reverend Gary Davis stuff - plenty of interesting guitar and the singing demands can be really, really minimal. Listen to Marie Knight do "When I Die (I'll Live Again)"; yes Marie was a truly great singer, but she just talked us all through that one... Perhaps some Mississippi John Hurt. "My Creole Belle" oughta do you nice. "Moonlight Lady" by Gabby Pahinui. "See that My Grave Is Kept Clean" "Fifty Miles of Elbow Room" And (if you really refuse to sing) start listening to John Fahey...
