                      the error occurs because the terms "could of" [which makes absolutely no sense no matter how you look at it] and the correct contraction "could've" are homophones.
                      And there is nothing wrong with saying "I could've cared less", the intent being that it would have been possible to have cared less, as opposed to the totally dismissive "I couldn't have cared less", which suggests that you had reached your limit of not caring.

                          yeah, I am always put off by the ignorant people who write 'could of', 'should of', 'would of'...just plain ignorance of the language.
                          This is why I refuted the 'Hooked On Phonics' people when they tried to push it in my kids' public school. I held up a sign for them that read: 'Huked Awn Fonix' is not how we should learn to read...
