Every quality in ear monitor system (and even most of the crap ones) have both a volume control on the belt pack and a built in limiter that prevents sudden noises from blowing out your ears. Also, some systems (e.g. the PSM200 system I mentioned above) lets you do your own mix from the stage, EVEN to the point of being able to simply insert the transmitter between the club's stage mike and their cable, and between your acoustic or electric guitar and their snake - very quickly and simply.
