I've only owned about 9 tube amps, but out of those I'd say:
Fender Pro Junior (tweed, mia) for bloozy noodling and super clean home recording.
AC-30: For everything but home use, great for a huge range of tones. Kinda picky with pedals though.
Fender Deluxe Reverb: It could use an attenuator for home recording/practicing, but the power is still somewhat manageable if you don't live in an appartement. Sounds amazing live at rehearsel volumes. Steer clear if you need a lot of clean headroom though.

I see it get slagged alot online, but I think the DRRI is the perfect combo for my needs. The notes really bloom better than any other amp I've played, plus the reverb and trem are great. I live in a house, and my music room is dead center and insulated, so I can get plenty loud at home (loud enough to mimic stage volume) and get my pedals responding the way they will at a gig. Its perfect sized for the small clubs and dives I play with my bands, where it gets mic'd up anyway. I like to play on the verge of breakup, and just don't get how I could do that with a 40-50watter without making my ears bleed.
Oh, and no bright cap mod, I use my eq.

I really like my hot rod deluxe III. It sounds good clean. Loud enough for anything i need. Takes pedal great. I have been able to achieve about any sound I want out if it with the right pedals.

My current fave is a Traynor YCV-40T. It is the discontinued black one with the 2 10's. The stock speakers were shit (Celestion Tube 10's) but I put a couple of Eminence Legends in and it really opened it up. It has a more robust and unique chassis, tube and cct board layout than a Fender. It makes it easy to service

My Clark Beaufort with 'verb (18 watt Tweed Deluxe clone). I've had it for about 12 years and I just love the tones I get out of that thing. Probably why I go through months of not using effects because the amp sounds so good with just the guitar going straight into it.

I'll add another vote for the Tweed Deluxe. It works in pretty much any situation for me. I love the clean tone, I can throw any of my dirt boxes at it if I need to, it has enough range of natural dirt that I don't need any extra fuzz (though that doesn't stop me from keeping a Tonebender around), it's an easy amp to carry around, and tweed combos just look so nice.
My runner-up would be the Supro 6424T. 6973s are lovely little tubes, has a great tremolo circuit, and has a wonderful overdriven sound for late 60s garage/psychedelic rock tones.

I've only had a few tube amps but so far my Peavey Prowler seems to be the most versitile, but the clean on my Roland JC 120 is cryatal.

The Lonestar, which of course, rules hard. Sparkleville with a capital S.
These Yamaha Fifties are great combos. Cheap as balls with great clean channels!
and speaking of Ric amps, this M16 Supersonic from the 60's is pretty badass. Rickenbacker should reissue some stuff!
