Helium is odorless and tasteless.  What it does in a completely enclosed space like a plastic bag is displace oxygen so you suffocate.  It can happen fast.  I've done the squeeky voice thing and after only a couple of lungfuls of helium in a row, I got dizzy and tingly with blue lips pretty quickly.

As a child, I took it upon myself to put a hole in some large helium birthday balloons. I was unsupervised and doing it after my mother told me no. I took huge deep inhales of it. Probably half the balloon or so... I thought it would just make my voice squeeky for longer... Anyway, next thing I know, I'm in the floor cabinets covered in pots and pans, crying, my mother standing over top of me going WHAT HAPPENED?

Apparently I blacked out and ran into the kitchen and fell into the cabinets.

Unneccesary expense. Ever see the warnings on ordinary plastic bags? "This is not a toy. May cause suffocation" etc?

Yeah, helium will knock you out, and so will your own breath.

I think the idea is that the helium bag provides a less harsh alternative to that.

I think it's sad on several levels. However, for a terminally ill patient, I think they should have the option. Unfortunately, according to the video, it's also being used by people who have chronic conditions, such as depression.

For most people, it's much easier to get Helium than painkillers or sleep meds.
At least, in sufficient strength and quantity to do the job.

And pills aren't very certain, tending to cause upset stomach and vomitting.
