That depends on what you are trying to accomplish. AES is good for recording and checking out new equipment, and if you attend the sessions you can get some very technical insight. Most pro audio manufacturers show up for AES and are very accessible.
For day to day practical knowledge, the show formerly known as Tape Op, which will now be called the Potluck show in New Orleans is a great hands-on show. Less gear to see, but more of a campus experience.
For indie rock showcase South by Southwest is still huge (maybe too huge?).
For instruments, winter NAMM (although it is trade only) is hard to beat.
