I'm almost certainly not the kind of person you were looking for a response from, as I'm a complete newbie to the recording, mixing and mastering game. I'm currently in the middle of mixing my band's first attempt at recording a demo. However, I notice that even with no experience, I've quadruple-tracked the lead vocals, and double-tracked the backing. So it appears that in an effort to get my music to sound like what I'm used to listening to, I've already picked up the habit that you're critisising. So I guess the only point of this post is to say it MUST be widespread and obvious, even sub-conciously, if a muppet like me is doing it instinctively!
