Other gauges, such as 43 gauge, are also sometimes used. Thinner wire (like 43 gauge) lets you put more turns on the same sized bobbin. In general, more turns = hotter output, but also less highs. Of course that's only part of the equation - the type and placement of the magnets, the size and thickness of the bobbin, and lots of other considerations go into pickup design...
