I can think of some decked out places on the West coast that have awful sound and some dive bars that have great sound just due to the acoustics. This guy, Jon Taffer, some kind of bar business expert, goes around fixing broken bars. One episode was about a live music venue that was failing. His advice was something to the effect of, "A live music venue needs three things: good sound, good lighting, and good bands". The first thing he did in that place was acoustic treatment, a bunch of those big things that hang from the ceiling and dampen reverberation etc. And then he fired the extremely crappy band that played there every week.
