I think it's faked. Sample a few notes from the chicken, play all the parts as individual tracks with a MIDI sequencer, and then "finger sync" the video shots. That's what I'd do if someone wanted me to play classical music on a rubber chicken. I have to admit, though, that Cousin Emmy does a pretty good job playing the rubber glove.
